Two new bottlings from Flying Tumbler

Flying Tumbler Whiskey is an independent Irish whiskey bottler from Co Carlow. We custom source whiskey spirit to our specification and then bottle everything ourselves in bond at Carlow Brewing Company. After a number of years planning and laying down stock, our first bottling was launched late last year. The Bird is a grain/malt blend aged in a mix of ex bourbon and sherry casks and bottled at 43% ABV. Vanilla forward on the nose with a mellow mouth feel, 'The Bird' is great in any classic whiskey cocktail or as a stand alone neat whiskey. 
 
The founders story is one of a return home to do something they are passionate about. Taking inspiration from the Irish flying tumbler, a pigeon with a natural beacon for home. It can fly for days from anywhere in the world to reach the home loft. After years apart, the Walsh boys returned to Ireland and worked with distilling experts to release small batches of independent Irish Whiskey that tell stories of their travels. 

Now in 2021 we are looking at releasing our next two releases. We are delighted to be assisted by four students in the Brewing and Distilling programme of IT Carlow. 

The project will see Flying Tumbler blend two expressions. The first, a development of its first product The Bird, will be a blend of triple distilled grain and malt whiskies married together in oloroso sherry oak casks for over 12 months and then blended with triple distilled single grain and single malt whiskies matured in ex bourbon oak casks.  The second bottling from a single cask - The Tippler -  will be a 12-year-old blend of grain and malt whiskies from two separate Irish distilleries initially aged independently in bourbon casks and then married into an oloroso sherry seasoned ex Californian 225L oak cask for over 12 months. Both products will be disgorged, filtered and cut to drinking ABV onsite at Carlow Brewing Company by Flying Tumbler and the IT Carlow brewing and distilling students. 

Our new iteration of The Bird is delicate and soft on the nose, light citrusy notes coming through with a subtle biscuit note. Lemon puff or custard cream biscuits. On the palate, that grain sweetness is very pronounced, the custard, vanilla and butterscotch from the bourbon comes through, giving way to a lingering fruity note. Orchard fruits such as apple and pear come through in a very delicate but lingering fashion which gives way to a wonderful sweet and lingering spicy note like sweet cinnamon. 

The Tippler is a lot more complex. This is our 12 year old blend, but we have added some much older spirit from distilleries around the country to give this release layer upon layer of flavour. Some older spirit in here give it a lot more depth and lingering flavours. Beautiful malty cereal notes at the front, like Weetabix splashed with warm milk. On the palate, the fruitiness really shines through, with layers of both summer berries and dessert flavours, like a delicious trifle, with layers of cream, custard and red berries. Biscuity and syrupy at the finish
